Welcome to the Essentials series, where I share my go-to bits of cake kit.

In these posts, you’ll discover the unsung heroes and must-have items that make novelty cake making just that little bit easier.

When I first started out, I had no idea what to buy. So in this series, I’m sharing the tools I couldn’t do without — from nifty cutters and moulds to simple gadgets that take the hassle out of clean-up. I’ve got you covered!

Mini digital scales weighing a sugar paste heart topper.

Item: Mini Digital Scales

Also known as: Digital Pocket Scale, Precision Scale, Coffee Scale

Expect to pay: From £6

Available from: Various retailers (Amazon, eBay, etc.)

This little gem is perfect for modelling work. I’ve used mine for years — they help keep all my models consistent. About the size of a pack of cards, they don’t hog worktop space, and they’re far more accurate than regular kitchen scales.

Accuracy is key when measuring small amounts for models and toppers. Plus, recording the exact weight means you can replicate a design consistently, every time. This can be especially useful when making multiples or working to a specific style.

If you're just starting out, these scales take away the guesswork. I recommend them to all my students, as they let you focus on the creative techniques rather than worrying about measurements.

For professionals, they’re a genuine time-saver. I’m often asked to recreate models from past designs, and without notes and weights, it can be tricky to remember all the details. Keeping a record means I can get straight to work — no relying on my middle-aged memory (or lack of it!).

Also, having a record of precise weights makes it much quicker to scale a model up or down without starting from scratch.

Prices vary, but you can get a decent set from around £6. Just be sure to check the reviews — there are some lemons out there. I recently picked up a new set (Salter, £12 on offer), so I’m looking forward to putting them through their paces.

And finally, don’t forget to calibrate your scales before use. It takes seconds, and instructions will be included.

Have a cake problem? Struggling with a certain technique?
